Sesame oil (마유/麻油) is recorded in the Donguibogam under 곡부 마유조 as slightly cool in nature with sweet flavor. It is arguably the single most essential flavoring in Korean cuisine — the nutty aroma of sesame oil is the defining scent of Korean food. Traditional production involves roasting sesame seeds until deeply golden, then pressing them through a stone mill. Every Korean household historically had its own preferred sesame oil maker (방앗간). In traditional medicine, sesame oil was prized both internally (for lubricating the intestines) and externally (as a base for medicinal ointments and hair treatments).
