醬油(Jangyu) - Fermented paste oil — the liquid drawn off from fermented soybean paste淸醬(Cheongjang) - Clear sauce — the refined, transparent soy liquid

Korean soy sauce (ganjang) traces its origins to the ancient kingdom of Goguryeo, where fermented soybean preparations were already refined. The Donguibogam classifies it under 곡부 장조 (grain section, fermented paste chapter), noting its cold nature and ability to resolve toxins. Unlike Japanese soy sauce, Korean ganjang is a byproduct of doenjang-making: soybeans are fermented into meju blocks, then soaked in salt brine. The liquid that separates becomes ganjang; the solids become doenjang. This dual-birth gives Korean soy sauce a distinctive character tied to doenjang.
