Onion

양파Yangpa

Allium cepa

Onions (양파, literally 'Western/foreign green onion') were introduced to Korea relatively recently, not arriving until the late 19th century from Western sources. They are therefore NOT recorded in the Donguibogam (1613). However, onions became so deeply integrated into Korean cooking that they are now indispensable. In traditional Korean medicine classification (post-Donguibogam), onions are considered warm with spicy-sweet flavor. IMPORTANT NOTE: Like garlic and green onion, onions are classified as 오신채 (五辛菜, five pungent vegetables) in Korean Buddhist tradition and are strictly avoided in temple cuisine.

Yes! Onion is a fundamental aromatic in Korean cooking, used as a base for countless stews, stir-fries, and braised dishes. It adds natural sweetness and depth to Korean sauces and marinades.

What does it taste like?

Same as the yellow onion you already know. In Korean cooking, onions are often grated or pureed into marinades for their natural sweetness and tenderizing enzymes.

Where to buy

Any supermarket. Yellow onions are used for most Korean cooking.

How to prepare

Peel, halve, and slice thinly for stir-fries and stews. Grate or puree for marinades and sauces. For jangajji (soy-pickled onion), slice into thick rings.

Pro tip: Korean recipes often call for much more onion than you might expect — do not reduce the amount. The onion melts down during cooking and provides the sweet base flavor that defines many Korean sauces.
