豆腐(Dubu) - Bean Curd — 豆 (bean) + 腐 (curdled/fermented), describing the coagulation process that transforms soy milk into solid form

Tofu's invention is attributed to Chinese prince Liu An around 164 BCE, though the details are debated. What is certain is that Korea embraced tofu with unique passion, developing a rich and distinct tofu culture. During the Joseon Dynasty (1392-1897), tofu was considered so important that a dedicated government office called 조포사 (造泡司) was established solely to manage royal tofu production. Buddhist temple cuisine elevated tofu to an art form — monks, forbidden from eating meat and allium vegetables, developed extraordinary techniques for pressing, marinating, smoking, and fermenting tofu to create an astonishing range of flavors and textures. The Korean word 두부 comes directly from the Chinese 豆腐 (doufu), but Korean tofu traditions — particularly the use of natural sea-salt brine (간수) as a coagulant and the tradition of eating warm, freshly made tofu with simple soy-based dipping sauce — are distinctly Korean. In rural Korea, making tofu was a winter communal event: families would soak soybeans, grind them on stone mills, and press the curd together, sharing the fresh tofu while it was still warm.

Tofu is available year-round, but traditionally it was most prized in late autumn and winter when freshly harvested soybeans yielded the sweetest, most flavorful curd. Winter tofu-making was a communal village event in rural Korea.

Processing Methods (법제)

Nigari (sea-salt brine) coagulation(간수 응고)

Traditional Korean tofu uses natural nigari (간수) from sea salt production to curdle soy milk. This yields a sweeter, more mineral-rich tofu than chemical coagulants.

Pressing(압착)

The degree of pressing determines firmness: light pressing for soft tofu (순두부), moderate for regular (두부), heavy for firm tofu (부침두부).

Consumption Tips by Health Goal

Detox

Eat plain soft tofu (sundubu) after consuming rich or heavy foods. Its cool nature and detoxifying properties help cleanse the system. Traditionally eaten the morning after overindulgence.

Digestion

Serve warm in soups or lightly braised. Avoid eating tofu ice-cold from the refrigerator if you have a weak stomach, as its cool nature may overtax cold constitutions.

Energy

Pan-fry tofu to add warmth to its cool nature, making it more suitable as a qi-building food for people with cold constitutions.
